Method
1. Grease a deep 14cm x 24cm loaf pan. Line base and 2 long sides with baking paper, extending paper 2cm above edges of pan.
2. Place gelato in a large bowl. Allow to soften slightly. Cut cake into 2cm-thick slices (you will need 6 slices of cake). Drizzle liqueur over cake. Divide gelato between 2 large bowls. Stir cherries into 1 half and Dark Choc Bits into remaining half.
3. Spoon cherry gelato over base of loaf pan. Arrange 3 slices of cake down the centre of the pan. Spoon Choc Bits gelato over top. Top with remaining cake slices. Cover and freeze overnight.
4. Remove dessert from freezer and turn out onto a plate. Drizzle with melted Choc Melts and top with cherries to serve.
