almond chocolate frians


Ingredients

  • Cooking oil spray
  • 8 egg whites, lightly beaten
  • 250g unsalted butter, melted
  • 11/3 cups almond meal
  • 2 cups icing sugar mixture
  • 2/3 cup plain flour
  • 1/2 cup White Choc Bits
  • 1 tblsp cocoa powder

Method

1 Generously spray a 12-hole friand pan (1/2-cup capacity) with cooking oil.

2 Whisk egg whites in a large bowl until just frothy. Add cooled butter, almond meal, icing sugar mixture and flour. Stir until just combined.

3 Transfer half the mixture into a separate bowl. Stir in Choc Bits and sifted cocoa. Divide cocoa mixture among prepared pan holes. Spoon remaining almond mixture over tops.

4 Cook in a moderate oven (180C) for about 30 minutes, or until golden brown and cooked when tested. Stand in pan for 5 minutes before turning out onto a wire rack to cool.

5 Serve friands warm or cold.

Notes

■ Fancy mixing things up? Replace almond meal with hazelnut meal for a change.
