brownies with mocha sauce


Ingredients

  • 250g unsalted butter, chopped
  • 400g dark chocolate, chopped
  • 1 1/2 cups brown sugar
  • 4 eggs
  • 1 cups plain flour
  • 1/3 cup cocoa powder
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 cup chopped walnuts (70g)
  • Ice-cream, to serve

Mocha Sauce

  • 1/2 cup cream
  • 1/2 tsp instant coffee granules
  • 200g milk chocolate, finely chopped

Method

1 Grease a 19cm square cake pan. Line base and sides with baking paper.

2 Place butter and half the chocolate in a medium saucepan. Stir over a low heat until smooth. Cool slightly.

3 Place sugar and eggs in a medium bowl. Stir with a wooden spoon until combined. Stir in cooled chocolate mixture. Sift flour, cocoa, baking powder and cinnamon over the top. Stir to combine. Stir in walnuts and remaining chopped chocolate. Pour into prepared pan.

4 Cook in a moderately slow oven (160C) for about 1 hours, or until cooked when tested. Stand in pan for 15 minutes.

5 Meanwhile, make mocha sauce. Heat cream and coffee in a saucepan over a medium heat and stir until coffee is dissolved. Add milk chocolate. Stir until smooth.

6 Transfer brownie to a chopping board. Cut into squares. Serve brownie with mocha sauce and ice-cream.
