cheesecake with chocolate filling

recipe as per rq by ms arin from my fb..‎(◕‿◕✿)


ingredient: (for cheesecake)
1/4cup melted butter + 2 tbspn melted butter divided
1 cup graham cracker crumbs ( u can use any other cracker such digestive)
1/2 cup granulate sugar divided
3 large eggs
1 1/2 cup sour cream
2 tspn vanilla extract
16 oz full-fat cream cheese

method:
1- preheat the oven for 325 degree & grease the bottom of the pan with 2 tbspn melted butter set a side.
2-combine graham cracker crumbs with 1/4cup melted butter & 1/4 cup sugar in a small bowl.mix until the crumbs coated with butter.empty the content into the prepare pan & push down firmly with fork.
3-in the medium bowl blend the eggs,sour cream & vanilla extract on the medium speed.add the cream cheese,1/4 cup of sugar & 1 tbspn of melted butter.mix on low speed until well combine.
4-pour the cheesecake filling over the graham cracker crust & spread evenly.bake the cheesecake for 50 minute-1 hour.the cake is done when the center jiggles slightly.
5-then remove the pan from the oven & let it cool before refrigerating it.

ingredient: (chocolate topping)

500g dark chocolate
300ml cream
200ml milk
2 whole eggs
1 egg yolk
whipped cream for garnish

method:
1-melted the chocolate into a bowl using double boiler method.when it fully melted remove from the heat.
2-warm the liquids.add the cream,milk into the sauce pan at the medium heat.DO NOT ALLOW TO BOIL.
3-whisk the eggs into another bowl & combine with the liquids.then strain the milk mixture into chocolate.whisking generally to let combine thoroughly.the FILLING NEEDS TO BE DENSE NOT FLUFFY.
4-pour the chocolate filling onto the cheesecake then bake for 5minute.then turn off the heat & leave it inside the oven for 40minute to let it cool.then take it out & place into fridge for around 3 hours.when the cheesecake is cool serve with whipping cream for garnish.

*** additional****

if bake the chocolate topping distress u i have another method for chocolate topping.for this u don't need to bake the cheesecake again along with the topping.here are the ingredient:

280g dark chocolate
140 butter
80ml water
4 eggs,separated
100g sugar

method:
1-melt the chocolate, butter & water using double boiler method.stir occasionally with rubber spatula.set a side.DON'T OVERHEAT CHOCOLATE& BUTTER AS THEY WILL BREAK & WON'T COMBINE WELL.
2-then pour the egg yolks & stir.
3-next,whip the egg white using the mixer whip on medium to high speed as soon they become fluffy add sugar when it start stiff turn off mixer.to test the consistency gather whites on hook if they stay means they're ready.if they fall of whip a little longer.
4-combine the eggs white&chocolate little by little. generally mix them together. then pour the mixture onto the cheesecake & chill for 3 hours.ready to serve.
