chocolate hedgehog slice


Ingredients

  • 250g unsalted butter, chopped
  • 2 x 200g blocks dark chocolate, chopped
  • 1 cup icing sugar mixture
  • 1 tsp vanilla essence
  • 1 egg, lightly beaten
  • 1/2 cup chopped walnuts
  • 1/4 cup finely chopped soft and juicy figs
  • 335g packet shortbread biscuits

Method

1. Grease an 18cm x 28cm rectangular slice pan. Line base and sides with baking paper, extending paper 2cm above pan edges.

2. Place the butter, chocolate, icing sugar and essence in a heatproof bowl. Sit the bowl over a saucepan of simmering water. Stir until it is smooth. Remove, cool slightly and stir in egg, nuts and figs.

3. Arrange half of the biscuits, in a single layer, over the base of prepared pan. Pour half of the chocolate mixture over. Repeat the layering with the remaining biscuits and chocolate mixture. Refrigerate overnight or until set.

4. Lift slice from pan and cut into squares.

Notes

This delicious slice can be made up to four days ahead. To ensure it stays fresh, simply store in an airtight container.
