chocolate cup cakes with thick chocolate ganache & chocolate button as deco

puding caramel





ingredient:puding ( A )
3 eggs
1 tin susu cair (my mom use ideal brand)
1 1/2 cup susu segar
1 tbspn tepung custard
1 tspn esen vanila


ingredient gula hangus ( B)
3/4 cup gula
1/2 cup air

method: ( for A)
1) pukul telur dengan gula sehingga kembang.

2) masukkan tepung custard,pukul lagi.then masukkan esen vanilla.kemudian tuang susu cair.kacau lagi sehingga betul2 kembang

3) selepas itu,masukkan susu segar.ketepikan.


gula hangit ( B )

1) masak gula atas api perlahan sehingga kuning keemasan.bahagikan kepada 2.
1 bahagian masukkan air (masa still atas stove).lagi 1 bahagian simpan untuk letak dalam loyang bersama puding.(jangan letak air.ketepikan terus)


sebelum masukkan dalam periuk kukus:
**masukkan bahagian A selepas tuang gula hangus dalam loyang.gula hangus yang balance lagi satu simpan untuk tuang bila sudah masak.

*** kemudian masukkan loyang yang sudah berisi gula hangus & puding kedalam periuk kukus.masak sehingga agak pejal & boleh disentuh.

blueberry cheese tart

cheese tart after baking... (blueberry,strawberry & chocolate cheese)

cheese tart before baking

like have been promised before..now time to give the recipe... ^_^


ingredient: (for pastry)
125g butter
40 g icing sugar
1 egg
220g tepung gandum
1/2 tspn vanilla essence

method:
1- satukan semua bahan & uli hingga menjadi doh.
2- ambil sebahagian kecil & tekan dalam acuan tart.
3- cucuk2 pastri dengan garfu & bakar doh pastri 8-10 minit / sampai setengah masak

ingredient : (for cheese)
250g cream cheese
blueberry filling
3/4 cup icing sugar
1 egg
1/2 cup whipping cream ( i use double cream anchor brand)
1 tspn vanilla essence

method:
1- pukul cheese & telur sehingga kembang.masukkan icing sugar, vanilla essence & whipping cream.terus pukul hingga nampak berkrim.
2- tuang adunan ke dalam pastri yang separuh masak tadi.sudukan blueberry filling sedikit ditengah2.
3- bakar selama 15-20 minit suhu 150 darjah celcius

udang masak lemak with nenas



ingredient:
*bawang putih 1 ulas
*bawang merah 6 ulas
*cili padi 10 biji
*serai 3 batang (lebihkan serai jika tiada lengkuas)
*lengkuas 1cm
1 cup santan pekat
1 tspn serbuk kunyit
garam & gula
nenas
udang

method:
1) blend semua bahan bertanda *

2) kemudian campur bahan yang di blend bersama dengan santan dalam periuk.kacau supaya tidak berketul

3) letak secubit garam & gula.masukkan asam keping ( boleh diganti dengan asam jawa jika tiada) kacau lagi.

4) masukkan udang.biarkan sekejap kemudian masukkan nenas.SIAP!

laksam


my favorite laksam

ingredient:-
laksam:1 tbspn tepung ubi
1 cup tepung beras
1 cup air panas
1/2 cup air sejuk

method (laksam) : 1-campurkan tepung beras & ubi,tuang air panas.kacau sebati sehingga cair.masukkan air sejuk.kacau lagi hingga jadi doh yang agak cair (macam agar-agar)

kuah: 2 ekor ikan kembung (rebus) + asam keping dalam air rebusan ikan
2 cup santan
5 ulas bawang merah
10 biji lada hitam (biji ) kalau guna serbuk 1/2 tspn
garam + gula
2 keping asam keping

method: 1- perisi ikan.blend ikan + bawang & lada hitam hingga hancur
2- masukkan santan kedalam ikan yang telah diblend.
3- masukkan dalam periuk,tunggu sehingga santan masak masukkan garam,gula (1/2 tbspn),keping asam keping.kacau sehingga mendidih.


sambal: 10 tangkai cili kering (blend)
gula + garam

panaskan minyak masak cili sehingga kering.then masuk garam + gula sehingga pecah minya.SIAP!

got this recipe from my mom's old book recipe..

**my mom redo the recipe because she find out that if 100% follow the recipe we'll never get smooth & soft mixture for the bottom.she tried almost every day to get soft mixture for the bottom.s0 this is re do recipe & i guarantee u'll satisfied with it.
previous recipe they never said about add some tapioca flour.BUT, U NEED TO ADD 3/4 CUP TAPIOCA FLOUR FOR THE BOTTOM MIXTURE (WHICH IS GREEN ONE) MIX WITH THE RICE FLOUR TOGETHER.also for the top ingredient u need to add 1/2 tbspn of tapioca flour.anything else u can follow recipe as below.


ingredient: 1 1/2 cup tepung beras (untuk bhgn bawah), 1 tsbpn tepung beras (untuk bhgn atas), 1 cup santan ,1/2 cup gula pinch of salt, daun pisang dibentuk empat segi seperti dalam gambar


method:1) bahagikan tepung beras kpd 2 bhgn (2/3 & 1/3).campur santan ke dalam 1/3 tepung untuk bhgn atas.manakala 2/3 campur dgn air panas(pastikan air betul2 panas supaya tidak jadi keras/liat).campur pewarna hijau sedikit/air daun pandan.2) masak air didalam kukusan sehingga mendidih.letak loyang yang telah di isi dengan daun pisang yang telah dibentuk empat segi tadi.3) masukkan 1 tspn gula bagi setiap acuan daun pisang,setelah itu tuang adunan tepung yang telah dibancuh air panas tadi separuh dari acuan.kukus sebentar sehingga beku.4) bila adunan beku tuang pula adunan tepung yang dibancuh dengan santan.tutup kembali kukusan lebih kurang 10 minit.SIAP UNTUK DIHIDANG!

kek batik with nut (almond & hazelnut)




ingredient:
1/4 cup of almond & hazelnut
3 cup dark chocolate
1 cup of butter/vegetable spread
15 pieces marie biscuit (break into small pieces)

method:
1) melted the butter together with dark chocolate.

2) when it nicely melted,set a side to let it cool.

3) add almond & hazelnut into the chocolate.then add biscuit.stir until well mix & the biscuit fully coated with the chocolate.pour into greased pan & store in refrigerator for at least 1 hours.DONE! enj0y ^_^

step by step:


6) popia yang telah siap di sira

5) hasil setelah digoreng

4) siap di gulung & boleh mula menggoreng.

3) letak bancuhan tepung supaya melekat.

2) lipat popia jadi bentuk segitiga.

1) letak inti di bhgn tengah kulit popia.


ingredient:
12 keping kulit popiah
100gm ayam cincang
15gm udang kering
15gm sotong kering

bahan dikisar nipis:
400gm sengkuang
80gm lobak merah
50gm kacang panjang
1 biji bawang merah

bahan sos:
3 sudu besar cili giling
3 sudu besar sos cili
3 ulas bawang putih(ditumbuk)
garam & gula secukup rasa
(campur dan kacau rata)

method:
1 panaskan 4 sudu besar minyak,tumis udang kering dan sotong kering sehingga naik baunya
dan masukkan ayam cincang dan tumis hingga ayam masak. masukkan sayuran yang di kisar,
dan tumis sekali lagi sehingga rata selama seminit

2 kemudian masukkan garam dan gula secukupnya. angkat dan sejukkan

3 letakkan 2 sudu bahan inti di tengah-tengahnya,lipat kiri kanan kulit popiah dan gulung kemas lekatkan tepinya dengan sedikit telur putih

4 panaskan minyak dan goreng popiah tadi sehingga kekuningan

5 hidang popiah dengan sos cili atau sapu sos di atasnya.

cendawan goreng tepung




ingredient:
cendawan
1 cup tepung beras
1/2 cup tepung gandum
5 tbspn serbuk cili
3 tbspn serbuk kari
garam & gula
air

method:
gaul semua bahan diatas sehingga sebati.jika tidak suka pedas tidak perlu letak serbuk cili.cukup sekadar letak serbuk kari.

unbaked yogurt strawberry cheesecake




step by step:

5) DONE! u can add any topping that u want.i using strawberry ice cream as the topping.it's so yummy

4) put into refrigerator for at least 3 hours.

3) pour in the ingredient on top the frozen cookies crumbs

2) pour in 1 container of strawberry yogurt. continue stirring.then add the whipping cream into the mixture.fold until nicely mix.

1) cream cheese until there is no lumps.

spaghetti meat ball




ingredient:
spaghetti
mushroom
cili blend
3 ulas bawang merah & 3 ulas putih (blend)
meet ball 15biji
3 tbspn sos tomato
4 tbspn sos tiram
air
gula & garam

method:
1) panaskan minyak,tumis cili & bawang blend.
2) setelah pecah minyak masukkan sos tomato & sos tiram.kacau rata.masukkan air supaya tidak hangit.
3) masukkan gula & garam diikuti meat ball.setelah masak,masukkan cendawan.
4) last sekali masukkan spaghetti.kaup balik.DONE!

sambal sotong kering







ingredient:
cili kering *
bawang merah & putih*
garam
gula
5 tbspn sos tiram
sotong kering yg telah direndam
air
*blend

method:
1) panaskan minyak tumis cili & bawang yang telah diblend.
2) biar sampai pecah minyak,masukkan gula, garam & sos tiram.biar mendidih
3) last sekali masukkan sotong.masak sehingga agak kering.siap untuk dihidang

ingredient:
1/2 cup melted butter
2 cup plain flour
1/4 cup sugar
tspn vanilla essence
pinch salt
1/2 cup milk
1 egg
1/2 baking powder

method:
1) cracked the egg into mix bowl.pour melted butter, sugar, salt.stir well.
2) pour in milk.continue stir.
3) now add the flour & also baking powder.dont forget to sift the flour first,to make sure there is no lumps.
4) using spatula fold the dough until it mix well.roll a ball & bake for 15 minute.DONE!

* u can pipe any filling that u want .i pipe in cream cheese & chocolate into the donut..it's soooooooo..yummy & fluffy

breaking fast wif my belove family at quality hotel..just want to comment few thing about the food..actually nothing much.my first impression was, i thought there don't have a lot of cuisine to choose but i'm wrong. cause i'm totally surprise with what they serve .they got almost everything i want to eat!from ala kampung style, Chinese food and of course my favorite which is satay.the do have lots of kuih-muih melayu, rojak,yong tau fu & also for kids they serve ice cream.kids can choose their own flavor & sparkles they want.yeah,can said that im really satisfied
& enjoy with their service & food tonight. thinking for suitable breaking fast place before end of fasting month with my family. looking forward for something that can satisfied my taste ^_^
